Our favorite writing is when we do silly journal activities. I have a "story starters" pack that I picked up at the $store and it has fun story starters like "What would you do if...cars could fly" or things along those lines. It's SO fun for creative out of the box writing and GETS him writing :D

I have found the book, Write Like This, by Kelly Gallagher to be helpful when teaching writing.
